By purchasing directly from Dandy Dharmawan, we are able to secure oursleves a few bags of their Carbonic Maceration Natural green beans. Ijen Lestari has been known for thier exceptional greens and experimental processing.
The whole coffee cherries are sorted before placing them to ferment in an air tight tank, with carbon dioxide injected into the tanks for 72 hours. Then the cherries are pulped and left to dry until it reaches11 % - 12% in moisture content.
