About
Caballero - Colinas is made from the Catuai variety, known for its sweet and chocolaty flavours. The coffee is processed using the Extended Fermentation Natural method, which enhances the natural flavours of the coffee beans.
The cherries are carefully handpicked by local trained pickers, who select only the ripest ones. The beans are then dried on patio, raised beds in the sun or shade for 11-20 days, with careful attention paid to the weather conditions.
The coffee is named after Marysabel, as she is the star of the family. Together, they have built a reputation for producing some of the best quality coffees in Honduras, and have won numerous awards in the Cup of Excellence competitions
