A classic washed Colombia, with a twist! Cherries undergo a dry aerobic fermentation of 24hrs, after which they are placed in grain pro bags for 90 hours in a temperature controlled environment, before they are pulped, washed and dried on raised beds.
The fermentation adds a creaminess to the coffee, due to the higher concentration of the lactic acid. We get notes of raisin and figs, undertone of nuttiness reminesence of hojincha and cashews.
It is a classic cup of washed Colombian, roasted to bring out balance of acidity and sweetness in the cup!
